Once in LHR when you enter. Then probably stamped at IBZ upon entry, stamped out when you leave TXL.
Rest of places in EU shouldn't stamp as they will be intra Schengen flights - hence no immigration controls.

Purely for wank value... I'm travelling into Europe on an Australian passport. Routing SIN-LHR-IBZ-ATH-FCO-ORY-AMS-TXL-LHR-BKK. Just to flaunt it to the friends, which (if any) countries are likely to stamp my passport. Will it just be in LHR and then never again in the EU, or don't we even get stamped anymore over there?
Thanks

Def stamped into the UK (not out of UK). Then stamped again entering the Schengen region of the UK, and possibly on the way of Schengen region. The 15 Schengen countries are: Austria, Belgium, Denmark, Finland, France, Germany, Iceland, Italy, Greece, Luxembourg, Netherlands, Norway, Portugal, Spain and Sweden. All these countries except Norway and Iceland are European Union members.
See this site for information on the Eurpean Schengen agreement.
So when travelling in Europe, travel between Schengen signatory countries is like domestic travel for immigration purposes. Travel into or out of the Schengen region is like international travel.

I can't for the life of me remember the process for outbound immigration in the UK...

You forget a fair amount when you leave the country for 8 years. I was sure that there wasn't an outbound immigration check - which is why I always find teh Oz outbound check strange - even after all these years...
